Winemaking
The vineyards are in the Curicó Valley, known for its cold, rainy winters and warm, cloudless summers, giving a good thermal range between day and night on well-structured, permeable soils that promote healthy root development. Cold maceration for 2–3 days before fermentation, which takes place in stainless steel tanks for 7–10 days with two daily pump-overs for effective color extraction and structure; aged in oak in minimal doses to preserve the fruit profile while adding complexity. Residual sugar 2.69 g/L, pH 3.56, acidity 4.79 g/L. Keep in a cool, dark place and avoid significant temperature variations.
About Valdivieso
Founded in 1879 by Don Alberto Valdivieso, Valdivieso is a Chilean winery whose Winemaker's Reserva range draws on the Rapel and Curicó valleys, and whose icon Caballo Loco Grand Cru line sources single-vineyard fruit from Apalta (Colchagua), Limarí and the upper Maipo Valley. Its Extra Brut sparkling wine, made by the traditional bottle-fermented method, is sourced from the Biobío and Itata valleys.
