Winemaking
Sourced from the Hacienda Chada Vineyard, planted in 2001 at 3,800 plants/ha on the slopes of the Andes foothills in the upper Maipo Valley, where long, gentle autumns suit Cabernet Sauvignon. Soils vary from 40 to 80 cm deep over the granitic rock of the foothills. A blend of 70% Cabernet Sauvignon and 30% Cabernet Franc, made with classic fermentation techniques and long maceration on skins, pumped over twice daily during fermentation. Aged 24 months in French oak, 15% new. Residual sugar 2.35 g/L, pH 3.37, acidity 4.76 g/L. Keep in a cool, dark place up to 20°C and avoid sudden temperature changes.

Founded in 1879 by Don Alberto Valdivieso, Valdivieso is a Chilean winery whose Winemaker's Reserva range draws on the Rapel and Curicó valleys, and whose icon Caballo Loco Grand Cru line sources single-vineyard fruit from Apalta (Colchagua), Limarí and the upper Maipo Valley. Its Extra Brut sparkling wine, made by the traditional bottle-fermented method, is sourced from the Biobío and Itata valleys.
