Winemaking
The vineyards are located in the Rapel Valley, known for its excellent conditions for red wines; a warm climate and mild autumn allow good tannin ripening, giving this Cabernet Sauvignon great structure. Cold maceration for 2–3 days before fermentation, which takes place in stainless steel tanks for 7–10 days with two daily pump-overs for color extraction. After fermentation a very light oak treatment is applied to preserve the fruit-forward profile. Residual sugar 2.64 g/L, pH 3.57, acidity 4.93 g/L. Keep in a cool, dark place and avoid significant temperature variations.

Founded in 1879 by Don Alberto Valdivieso, Valdivieso is a Chilean winery whose Winemaker's Reserva range draws on the Rapel and Curicó valleys, and whose icon Caballo Loco Grand Cru line sources single-vineyard fruit from Apalta (Colchagua), Limarí and the upper Maipo Valley. Its Extra Brut sparkling wine, made by the traditional bottle-fermented method, is sourced from the Biobío and Itata valleys.
