Wine expertise, beyond the bottle

Alongside the import business, Gustavo Piteo works directly with restaurants, hotels, retailers, companies and private collectors: tastings, staff training, wine education, pairings, and building a list or a cellar worth having.

What he offers

Each of these is shaped around what you need, so nothing below is a fixed package. Tell us what you have in mind and Gustavo will put something together.

Alongside the importing, Gustavo works directly with restaurants and their service teams to build a wine culture that serves both knowledge and sales.

The aim is not only to teach a team about wine, but to help them talk about it, recommend it and sell it with confidence, without ever losing the honesty of the experience for the guest.

Corporate & private tastings

A guided tasting for your team, your clients or your guests, led in person and built around whatever the occasion calls for.

  • Themed flights: a single region, a grape across countries, a vertical
  • Run at your office, your venue or a restaurant
  • Groups of any size, from a boardroom table to a full room

Professional staff training

Floor and bar training for restaurants, hotels and retailers, so your staff can sell wine with confidence instead of reading the label back to the guest.

  • How to describe, recommend and upsell a list
  • Service technique: opening, decanting, glassware, temperature
  • Sessions built around the wines you actually pour

Wine sales training

Turning what a team knows into what a team sells: how to present a wine, read a table and make a recommendation that lands.

  • How to open the conversation and read what a guest actually wants
  • Recommending up without pushing, and rescuing a hesitant table
  • Building the confidence that turns product knowledge into revenue

Wine etiquette & service

The mechanics of serving wine properly, so the ritual at the table looks effortless and deliberate rather than improvised.

  • Presenting the bottle, opening it cleanly, pouring order
  • Temperature, glassware and decanting: what matters and what does not
  • Protocol and composure when something goes wrong at the table

Wine education

Structured classes for people who want to understand wine properly, whether that is a hospitality team or a private group.

  • Regions, grapes and how a wine is made
  • Blind tasting and how to build a working palate
  • Groundwork for anyone heading towards a formal certification

Food & wine pairing

Pairings designed against a real menu: your dishes, your kitchen, your price points.

  • By-the-glass pairings for an à la carte menu
  • Full pairing menus for a tasting menu or a one-off dinner
  • Pairings for a private event, worked out with your chef

Wine list & selection consulting

An outside palate on your list: what to keep, what to cut, and what is missing.

  • A list reviewed against your menu, your margins and your guests
  • Selections to fill the gaps, from any supplier, not only ours
  • Pricing and by-the-glass strategy

Cellar consulting

Help building and looking after a cellar, for a restaurant that stores its own or a private collector starting one.

  • What to buy, what to drink now and what to lay down
  • Storage conditions, organisation and inventory
  • Valuing and rebalancing a collection you already own

How to set one up

  1. Call or email

Tell us roughly what you are after: a tasting for the office, training for a new floor team, a look at your list. A rough idea is enough to start.

  2. Gustavo talks it through with you

He will ask about your guests, your menu and what you want people to walk away with, then propose a format that fits.

  3. You get rates and a date

Rates depend on the format, the length and the wines involved, so they are quoted per engagement rather than listed here. Once you are happy, we book it in.

Talk to Gustavo

For availability, rates, or to talk through an idea that isn’t on this page, get in touch and you will speak to him directly.

Planning a single occasion instead? Private, group and pairing tastings, and the different formats they can take, are on bespoke wine experiences.

These services are offered to businesses and to private clients alike. They are consulting and education, booked separately from the wine we distribute. Real Vinum sells wine only to licensed Florida trade accounts.
