Fine effervescence with a soft, pale-yellow color. Complex on the nose, with soft aromas of green apples, citrus fruit, pears and toasty notes; fresh and round on the palate, with balanced acidity and complex fruity notes finishing on citrus and toasted cake and bread flavors.

Winemaking
Made by the traditional, bottle-fermented method from a blend of 60% Chardonnay and 40% Pinot Noir sourced from the Biobío & Itata Valley, on hillside vineyards near the Biobío and Itata rivers that provide fresh winds and proper sun exposure, allowing slow ripening that retains delicate aromatics, good structure and crisp acidity. Grapes were harvested by hand early in the season (1–15 March) to keep their fresh character; the second fermentation took place in the same bottle, resting 18 months on the lees before remuage and dégorgement, followed by a further 6 months in bottle. Residual sugar 6 g/L. Serve at 8°C.

Founded in 1879 by Don Alberto Valdivieso, Valdivieso is a Chilean winery whose Winemaker's Reserva range draws on the Rapel and Curicó valleys, and whose icon Caballo Loco Grand Cru line sources single-vineyard fruit from Apalta (Colchagua), Limarí and the upper Maipo Valley. Its Extra Brut sparkling wine, made by the traditional bottle-fermented method, is sourced from the Biobío and Itata valleys.
