Winemaking
From vineyards in the small Apalta Valley, within Colchagua, planted at the base of the hills on deep, free-draining colluvial soils. The hills to the north and the Tinguiririca River along the southern edge of the valley temper summer temperatures, and autumns are long and mild, allowing an expression of Carménère rarely seen elsewhere in Chile. A blend of 85% Carménère and 15% Cabernet Sauvignon. Fermented in stainless steel with 21 days on the skins, pumped over three times daily, then aged 24 months in French oak. Residual sugar 1.94 g/L, pH 3.59, acidity 5.09 g/L. Keep in a cool, dark place; serve up to 20°C and avoid sudden temperature changes.

Founded in 1879 by Don Alberto Valdivieso, Valdivieso is a Chilean winery whose Winemaker's Reserva range draws on the Rapel and Curicó valleys, and whose icon Caballo Loco Grand Cru line sources single-vineyard fruit from Apalta (Colchagua), Limarí and the upper Maipo Valley. Its Extra Brut sparkling wine, made by the traditional bottle-fermented method, is sourced from the Biobío and Itata valleys.
