Winemaking
Pinot Grigio originates from an area between Alsace (Pinot Gris) and Germany (Rulander); in Italy it is especially cultivated in the Provinces of Treviso and Venice. Grapes are harvested at perfect ripeness balance, de-stemmed and crushed, then placed in a pneumatic press where the must is separated from the skins, cooled and left to decant. 24-36 hours later, fermentation of the clarified must is triggered at 16-18°C; the temperature is lowered to around 8-10°C once alcoholic fermentation is over, to preserve the aromatic component. Must be stored in a cool, preferably dark place; during the following year the aromatic notes evolve into olfactive maturity that privileges complexity over fruit. Serve at 8-12°C. Packaged in 75cl bordolese reale bottles, in boxes of 6.
