Winemaking
Grapes come from the provinces of Treviso, Padua, Belluno, Venice and Vicenza in Veneto, and the provinces of Gorizia, Pordenone, Trieste and Udine in Friuli Venezia Giulia. Glera grapes are harvested at the perfect point of ripeness to maintain their acidic properties and freshness, then de-stemmed, crushed and soft-pressed; the must is cooled and clarified by flotation, and yeasts are added to start alcoholic fermentation at a controlled temperature of 16-18°C. The temperature is then lowered to 8-12°C and, after 8 days, the first racking gives the Glera base wine. Pinot Nero grapes are harvested when perfectly ripe, de-stemmed and crushed, then fermented on their skins at a controlled temperature of 25°C with scheduled pump-overs and a délestage every 3 days; after 5-6 days the pomace is racked and pressed to obtain the Pinot Nero base wine, which is combined with the Glera base for the second fermentation. For the second fermentation, the sparkling base wine is sterile filtered, sugars and specially selected yeasts are added, and it is placed in an autoclave to re-ferment and reach the desired overpressure. It is then cooled to -2 to 0°C and matured with the yeasts through short batonnages. After 60 days the wine is filtered for bottling. Serve at 4-6°C. Packaged in 75cl customized bottles, in boxes of 6.
