Straw yellow with a very bright steely rim. The nose is expressive, elegant and full of character: crisp orchard fruit (apple and Limonera pear), citrus (grapefruit and lime) and flowers (rose and acacia), intense and clean with true varietal personality. Powerful, fresh and balanced on the palate, with fruit, balsamic notes and a hint of lemon drop. Creamy and fresh through the mid-palate, with a minerality that opens onto salty, oceanic notes. A wine of great length with a superb finish.

Pairs with: Baked sea bass, gratinéed scallops and creamy lobster rice. Its weight, lees aging and saline character let it stand up to more intense dishes.

Winemaking

The estate's first single-vineyard wine, from El Bacelo: a 3-hectare parcel on the easternmost edge of the property, the first to catch the morning sun. It is named for the year the Pazo was founded, 1411. Only the free-run juice is used. It ferments at low temperature with the vineyard's own yeasts, spends 6 months on its lees with regular bâtonnage, then a further 4–5 months in stainless steel under an inert atmosphere. Production is limited to 1,411 bottles and 1,411 magnums a vintage. Drinks well for up to 9 years.

About Pazo de Rubianes

The largest vineyard in the Salnés valley: 25 hectares of south-west-facing slopes between 100 and 250 meters, less than 3 km from the Atlantic, on shallow sandy soils of granite origin. The trellis-trained vines are 20–30 years old and grown under permanent cover crops. Every wine is made solely from estate fruit, hand-harvested parcel by parcel and vinified separately. The vineyard wraps around a botanical garden declared an International Garden of Excellence and celebrated for its camellias, which is why Professor Stephen Hawking called these the "camellia Albariños" when he visited in 2015. The estate sits in Vilagarcía de Arousa, overlooking the Ría de Arousa.
