Attractive greenish-yellow color, clean and bright. An intense fruity nose of plum and peach with subtle citrus and floral notes of acacia and jasmine, combining finesse with power, complexity with personality. Silky on entry, intense and refreshing on the palate with clear varietal character; on the finish all its aromas return. Long, deep, savory and mineral: a wine that leaves no one indifferent.

Pairs with: Steamed shellfish, oysters, clams in white wine and grilled white fish. Its freshness, minerality and citrus notes are a particularly good match for Atlantic cooking.

Winemaking

The estate's emblematic wine, made only from Pazo de Rubianes fruit, hand-harvested parcel by parcel. The grapes are chilled below 6 °C, destemmed and gently crushed, then cold-macerated for 4–6 hours in stainless steel. Free-run and press juice are kept separate in small tanks by parcel and fermented at low temperature with the vineyard's own yeasts, then aged at least 4 months on the lees with regular bâtonnage. Selected tanks are blended for consistency from the first bottle of the vintage to the last. Drinks well for up to 7 years.

About Pazo de Rubianes

The largest vineyard in the Salnés valley: 25 hectares of south-west-facing slopes between 100 and 250 meters, less than 3 km from the Atlantic, on shallow sandy soils of granite origin. The trellis-trained vines are 20–30 years old and grown under permanent cover crops. Every wine is made solely from estate fruit, hand-harvested parcel by parcel and vinified separately. The vineyard wraps around a botanical garden declared an International Garden of Excellence and celebrated for its camellias, which is why Professor Stephen Hawking called these the "camellia Albariños" when he visited in 2015. The estate sits in Vilagarcía de Arousa, overlooking the Ría de Arousa.
