Clean and bright, it has an appealing pale yellow color with golden highlights. The nose is decidedly elegant and expressive; with surprisingly fine aromas of white stone fruit with citric notes, resinous touches, acacia blossoms, and bay. Lively and fresh on the palate, with a fluid texture and a balanced, lingering finish.

Pairs with: Roasted scallops over truffled potatoes; millefeuille of smoked eel, foie gras and sour apple; steamed cockles with lime juice

Winemaking

Made to showcase the quality of the Godello grape. After a rigorous selection the grapes are destemmed, chilled and cold-macerated. The free-run juice is bled off and the rest pressed very gently in a pneumatic press; the must is clarified by flotation for aromatic purity, then fermented at 16 °C in stainless steel for about 60–70 days and kept on its fine lees for four months. 100% Godello from the estate's own vineyards in San Clodio, Ribas de Sil. Serve at 8–10 °C. Suitable for vegans.

About Pazo de la Cuesta

Galicia's oldest family winery, with records of winemaking on the estate going back to 1416. In the 19th century its wines, sold as "Palacio de la Cuesta," were the first in northern Spain to carry a label. The 40-hectare estate runs down to the banks of the Sil River in the easternmost corner of the Ribeira Sacra. Its vines average 40 years old, and just over two hectares are pre-phylloxera vines more than 150 years old. Every wine is made from the estate's own grapes, using native varieties.
