Winemaking
Produced by Global Wines S.A. in Carregal do Sal, Dão, Portugal; winemaker Isabel Escudeiro. Vinification: total destemming, gentle pneumatic pressing, natural static clarification and alcoholic fermentation at 15°C, followed by 2 months of bâtonnage in stainless steel. Matured at least 1 month in bottle before release. Total acidity 5.8 g/L, sugar 2.0 g/L, pH 3.30. Recommended serving temperature 8°C. Contains sulfites.

Global Wines S.A. is based in Carregal do Sal, in Portugal's Dão region, the country's oldest wine-producing region, where it makes the Cabriz range, including the Colheita Selecionada, Reserva and Sauvignon Blanc lines, under winemaker Isabel Escudeiro. Cabriz has repeatedly featured in the Wine Spectator and Wine & Spirits Top 100 lists and collected numerous “best value” and “buyer's choice” mentions in national and international publications.
