Winemaking

In Alsace, vines are considered old once they reach at least 25 years; at Ribeauvillé the estate's old vines are at least 30 years old, with low yields that produce rich, complex wines. Grapes are harvested exclusively by hand; whole bunches are pressed in pneumatic presses to avoid trituration, and juices are separated to optimize quality. After static settling, the wine is fermented under temperature control and aged on fine lees for 7 months. Dry style. Residual sugar 2.8 g/L. Total acidity 6.24 g/L (as H2SO4). pH 2.98. Serve between 8 and 10°C. Drink young to take advantage of its aromatic richness; will age favorably for 5 years.
