Ícono2021
Las Susanas · Uco Valley
Marked by a characteristic bell pepper aroma alongside mineral notes and ripe black fruit such as cherry and sour cherry typical of the terroir. Very smooth on the palate, though shaped by the minerality of the Gualtallary soils.
Pairs with: Bone-in rib steak, roast lamb and game. Ideal for dishes of great intensity and long, slow cooking.

Winemaking
A limited edition of 2,000 bottles, 100% Cabernet Sauvignon from Gualtallary, in Mendoza's Uco Valley. From own-rooted (“pie franco”) vines around 10 years old, sustainably drip-irrigated with meltwater from the Andes. Fermented in first- and second-use oak barrels rotated 360° three to five times a day; indigenous yeasts are used for 5-7 days before inoculating with selected yeasts, waiting for full grape ripeness to achieve balanced tannins. Aged 18 months in French oak. Winemaker: Facundo Chalamán.
