Winemaking

Made from grapes grown in a small parcel selected by the winemaker within the estate's Los Chacayes property, in the Uco Valley. Region: Los Chacayes, Uco Valley, Mendoza; altitude 1,250 m.a.s.l. (4,100 ft). Harvest: hand-picked and collected in 12-kilogram (26-pound) bins, by stages within the same estate; conducted in the early morning so grapes reach the winery at low temperatures. Bunches that do not meet quality and health standards are discarded at the estate. Winemaking: 100% fermented with indigenous yeasts. Production is carried out in concrete tanks, to preserve the variety's typical traits and the identity of its terroir; fermentation activities are conducted manually, in traditional ways. 60% of the total volume is aged for 12 months in first- and second-use 225-liter (60-gallon) oak barrels, where malolactic fermentation occurs. A complex wine with ample structure that may be aged for several years. Serving temperature: 16-18°C (61-64°F).
