A clean, brilliant, deep cherry red with garnet hues. Intense and complex on the nose, with well-defined red and black fruit on a spicy background, toasted oaky notes of coffee and chocolate, and a final touch of liquorice. Intense and mouth-filling on the palate, powerful and meaty, with confiture-fruit and spicy toffee notes, well-defined liquorice, and an enveloping, round, creamy finish.
Pairs with: Roast lamb, beef tenderloin and game dishes. Its single-estate character and structure call for deeply flavored meats and traditional preparations.

Winemaking
From 35-year-old estate vines in the La Cebolla area, in the municipality of Gumiel de Mercado; 100% Tempranillo (Tinto Fino). Maximum yield 3,500 kg/ha. South-facing hillside vineyard on clay/limestone soil at 940 m elevation. Handpicked harvest in 15-kg boxes, with a double selection in the vineyard and again at the winery. Cold soak at 10–15°C for a minimum of 48 hours before fermentation. Alcoholic fermentation controlled below 30°C using native yeasts from the grape, with malolactic fermentation in new French oak barrels. Aged 19–20 months in oak barrels, 100% French. Serving temperature 12–16°C.
About Briones Abbad
Makers of the Cantamuda wines: a family project of Carmen and Luis Ángel in Ribera del Duero, from their own vineyards around La Horra, near Roa: high-altitude sites such as La Trinitaria and El Pino at 810–820 m, on sandy, calcareous and gravelly soils. Everything is hand-harvested into 15 kg boxes and selected twice, in the vineyard and again at the winery. In 2018 the family bought and restored their old store at the Roa railway station, built around 1956.
