Deep, dark and intense in color, with pleasant, slightly garnet highlights. Alcoholic on the nose; in sequence, sour cherry, plum, cherries in spirit, and toasted almond, with very interesting final notes of coffee, tobacco and cocoa. Powerful, warm, broad and enveloping on the palate, with a light tannic sensation; long, persistent and pleasant, leaving the mouth clean and wanting another sip.

Pairs with: Excellent with furred game and grilled red meats, and outstanding with long-aged cheeses.

Winemaking

Grapes: Corvina (45–95%), Corvinone up to 50% (replacing an equal share of Corvina), Rondinella (5–30%), with small percentages of Oseleta and Molinara. From Valpolicella (Verona). Grapes are carefully selected in the vineyard; only perfectly healthy, ripe bunches are laid in a single layer on wooden crates or bamboo racks and moved to well-ventilated drying lofts (fruttai). They rest there 3–4 months until they lose at least half their original weight and reach a sugar concentration of 25–30%, with a final health check before pressing. After pressing, the must ferments in a special vinificator that allows temperature control during the January–February fermentation, with cap punch-downs to aid extraction. The wine is then aged in large Slavonian oak casks and French oak barriques; after tasting, the blend is bottled and rests further before release. Best stored in dark, dry places at 10–14°C; structure and alcohol support 4–8 years of ageing. Serve at 16–18°C.
