Cantina Tombacco 1919 · Primitivo di Manduria D.O.C.
A pleasant feeling of warmth on tasting, accompanied by a light note of acidity, saltiness and slight tannicity. Clean and warm on the nose, with hints of blackcurrant jam and plum followed by intriguing notes of pepper and vanilla, and excellent mouthfeel with a pungent, warming sensation on the palate.

From southern Apulia, in the provinces of Taranto and Brindisi. Vinification is traditional, with daily pumping-over for the first week and every other day in the second week of fermentation, at a temperature of 24-28°C. After alcoholic fermentation, the skins are racked and softly pressed to set the best conditions for malolactic fermentation. Aged in wooden barrels. The sheet gives two different optimal serving temperatures: 18-20°C in the main specification, and 16-18°C in the food-pairing note.
