Winemaking
From vineyards in the Benevento province. Winemaking is traditional, with daily pumping-over for the first 3-4 days after harvest, continuing with lengthy daily pumping-over until alcoholic fermentation (at 25°C) is complete. After fermentation, the décuvage follows and the skins are softly pressed to set up conditions for malolactic fermentation. After malolactic fermentation the wine is racked 2 or 3 times, then aged partly in steel vats and partly in 500-litre tonneaux before the cuvée is prepared for bottling.
