Straw yellow with greenish reflections, clean and bright. High aromatic intensity, with frank primary aromas of stone fruit and citrus (apple and pear, apricot and peach) and a note of fennel. Unctuous on the palate, lightly textured and well structured, with balanced acidity, a slightly rich edge and an elegant bitterness that keeps it persistent. Long, fruity finish.
Pairs with: Galician-style octopus, hake in salsa verde and creamy mushroom rice. Its balance of freshness, weight and mineral notes works with fish and with richer, unctuous preparations.

Winemaking
100% Godello from the estate's own and closely managed vineyards in Fontei, Freixido, Trasdeirelas, Pedrazais, A Veiquiña, O Redondo and San Roque, hand-harvested into 15 kg boxes. Destemmed and lightly crushed, then skin-macerated at around 10 °C. After pressing and static settling, the clear must is fermented in temperature-controlled stainless steel at 16 °C and aged on its lees before filtering and bottling.
About Joaquín Rebolledo
Based in Valdeorras, in the north-east of Ourense province, the natural gateway into Galicia, a deep and fertile valley carved by the Sil River. Its 35 hectares of sun-facing vineyards grow on slate and clay soils among chestnut and olive trees. Forty years ago the Rebolledo family were pioneers in reviving the Godello grape, and today its Godello vines average 35 years old. The winery is equally known for Mencía, the great red grape of north-west Spain, and its young and oak-aged reds continue to win national and international awards.
