Intense ruby red with garnet highlights. Warm and complex on the nose: ripe blueberry, blackberry and wild strawberry first, then plum, black cherry and vanilla, and finally tobacco, dark chocolate and a touch of green pepper. Warm, elegant and complex on the palate, with ripe berry fruit, soft tannins and a very long finish.
Pairs with: Game and other strong meats, braises and stews, herby cheeses. The producer also suggests fruit jam and jam tarts.

Winemaking
50% Cabernet Sauvignon and 50% Cabernet Franc from the province of Treviso. The vines are worked by double reasoned maturation: some canes are clamped before the fruit is fully ripe so the grapes go on concentrating while they hang. Healthy bunches are crushed and fermented in small vats with maceration for colour and tannin, after which the wine spends two years in concrete, which leaves it with no oak aroma of its own, and at least six further months in bottle before release. Serve at 18 °C.
