Winemaking
100% Viura, known as Macabeu/Maccabéo in Roussillon (southern France) and Macabeo elsewhere in Spain, from vines over 90 years old in the historic El Castillo vineyard, planted by the family's grandfather Luis Saenz at the start of the last century, on calcareous clay soil under a Mediterranean climate (13 inches of rainfall per year). Grapes are hand-harvested and transported to the winery in wide, low-height trailers of 2,000 kg capacity to arrive in perfect condition.
