Winemaking
Hand-harvested at the right moment, destemmed and crushed, then macerated with continuous pumping over to draw out colour, tannin and aroma. Fermented in stainless steel at 28 to 30 C until the desired Baumé, when grape brandy is added to fortify it. Blended from wines of different ages and sources, with a minimum of seven years in wood. Winemaker Pedro Sá.
